Tropical Chicken with Spicy Fruit Salsa

Preparation time: 10 minutes
Total time: 30 minutes plus 1 hour refrigeration
Serving size: Makes 4 filets

Ingredients

1/2 cup orange juice or pineapple-orange juice
1 Tbsp. soy sauce
1 Tbsp. orange marmalade
4 Chicken Breast Filets, thawed
4-8 tsp. orange marmalade 

Spicy Fruit Salsa

1 cup of your favourite fruits (best choices are: honeydew melon, mango, strawberries, pineapple, red grapes and apples), chopped
1/3 cup salsa
1 bird pepper, chopped
1 tsp. sugar

In a plastic storage bag, mix orange juice, soy sauce and 1 tablespoon orange marmalade; add chicken, turn to coat thoroughly. Refrigerate for at least 1 hour, turn bag over once.

Combine fruit salsa ingredients and mix well.

Grill or broil chicken about 8 minutes, turn, top each filet with 1 to 2 teaspoons of marmalade and continue cooking for 8 to 10 minutes.

Serve chicken topped with fruit salsa. Rice and steamed vegetables make excellent side dishes with this fresh, spicy meal.
